Palestinian Fast Food

Felafel deep fried ground chickpeas usually served in a pitta bread sandwich with salads, pickles, tahina, chilli sauce, chips or you can simply buy a bag full. Their shape varies from place to place, in Ramallah they happen to be finger shaped.

Humus a sort of a paste of chickpeas, tahina, spices, garlic and olive oil. It can be served with meat, when its humus w lahma.

Fuul sometimes this food is unfortunately spelt 'fool' or even 'foul,' but is actually quite tasty. It is basically stewed fava (brown) beans with garlic, olive oil and various spices. It makes a good hearty breakfast.

Schwarma (photo left) this is made up of slices of meat pressed together and cooked vertically on one large rotating skewer. Slices are shaved off and eaten in a pitta bread sandwich with the usual assortment of sauces and salads.


Sfeha
also somewhat misleadingly called 'pizza' or 'Armenian pizza,' this is in fact a flat round of dough, big or small with minced meat, tomato and onion on top.



Kubeh this is a lemon shaped deep fried concoction of minced meat, sometimes with pine nuts encased in cracked wheat. Must be eaten with lemon juice. You might also see the ingredients of this dish served raw.


Sambouesk a three cornered pie stuffed with spinach or meat.
