Mtabel/Baba Ghanough some people call this smokey flavoured dish 'mtabel' while others call it 'Baba Ghanough,' and I haven't yet found out why, suggestions would be appreciated on this somewhat puzzling matter. As for what it is, that's more simple, the flesh of baked aubergines is scooped out and blended with tahina making a smooth creamy salad.
Turkiya this salad of cooked tomatoes and onions is spiced to varying degrees and can be anywhere from hot and mouth-burningly spicey to mild and sweet tasting.
Labanah a white sour cream cheese sometimes rolled into small balls and kept in olive oil. Especially good straight from the village. You'll either love it or hate it.
Tabouleh a mixture of cracked wheat, lots of finely chopped parsley and lemon, some people also add tomato and cucumber. Excellent eaten wrapped in lettuce or vine leaves.
Ba'donis tahina and chopped parsley resulting in a green leafy sludge.
